Calamari and Octopus Salad (raison d'etre)

To All Aspiring Young Emerils who can utilize these instructions,


Take 2) 2 ½ lbs. packages of frozen Calamari. Thaw then clean individually (constantly rise under water) and remove transparent bone if it exists. Cut into small rings (~1/4"). Put in boiling water and cook for 2-3 min. If you exceed that time they will toughen and then the cooking time will be about 1 ½ hours. So be alert and constantly sample them.


Get two octopuses or octopi, have the water boiling and slowing immerse them one at the time. Cook for about 1 ½ hrs or when tender by sampling. Then cut into bite size pieces. Place all in an ample size bowl.



Cut into small pieces (~1/4" sq.) 1 red,1 green,1 yellow peppers, 4-6 stalks celery and garlic (about half a hand full June’s not Tom’s) add to the sea food mixture. Then pour virgin olive oil to coat everything (not to much) and season to taste (salt only) finally add very little lemon juice. Be sparing with the lemon juice if you put in to much you can’t take it out. So add a little and taste etc. then put in frigs. Remember a good cook has judgment so use it with these instructions.
