Carrot Cake


Cake:

2 cups all-purpose flour
2 cups sugar
1 cup ground walnuts (almost a powder)
2 teaspoons ground cinnamon (from sticks)
2 teaspoons soda
1 teaspoon baking powder
1/2 teaspoon salt
3 cups grated carrots
1/2 cup applesauce
1 cups vegetable oil (canola)
4 eggs
1 teaspoon vanilla extract

Mix together all the ingredients into a large mixing bowl. Pour batter into 11 X 9 inch (inside dimension) buttered cake tin. Bake at 350 degrees for 60 minutes or until done. Cool completely before frosting. Refrigerate.

Frosting:

1 (8-ounce) package cream cheese
1/2 cup butter, softened
1(1-pound) box powdered sugar
1 teaspoon vanilla extract
1 cup chopped walnuts

Cream together cream cheese, butter and sugar until smooth. Add vanilla and walnuts. Blend completely.
